We are just about to enter the Hungry Gap in the UK, which lasts from April to early June. This is when most of the winter crops have ended but before the new season’s produce is ready to harvest. However, it is still possible to make tasty plant-based recipes with locally grown ingredients.

The dishes are 100% plant-based (oil free and gluten free options). Rohini Bajekal, Nutritionist and Head of Communications & Board Member of PBHP UK will share nutrition tips.

We will be cooking along together from 6.15pm-7.30pm on Wednesday 31st March (ingredients should be prepped ahead of time).

We will make 3 simple recipes:

  • Wild Garlic Soup
  • Squash and Barley Risotto
  • Rhubarb and Date Compote

Chard, spinach or kale are all good as a back up if you can’t find wild garlic in a veg box or foraging. Uchiki kuri/ Crown Prince squash but any squash will work ok.

About our host

LOVE Food CIC is a new community organisation that aims to increase access to, and raise awareness of the benefits of, Local, Organic, Vegan and Ethical Food. Maresa has been vegan for nearly 30 years and has worked in the local food and community sectors for 20 years, including helping to set up farmers’ markets, veg box schemes, community supported farms and food co-ops. She also set up and ran her own vegan organic café in St Leonards on Sea – Moose’s Kitchen.

Maresa tries to eat as much seasonal, local produce as possible, and buy direct from small-scale organic farms. This is more difficult at certain times of the year.
