
Nutrient Boosted Tomato Sauce

Ingredients
- 2 generous handfuls cherry tomatoes
- 2 red sweet peppers
- 2 cups cooked yellow lentils
- One third a tube of tomato paste/puree
- Half a bottle of passata
- Pinch of salt
- 2 teaspoon apple cider vinegar
Step by Step Instructions
Step 1
Roast tomatoes and peppers for around 30 minutes at 180 degrees until tender
Step 2
Blend with all other ingredients
Step 3
Feel free to re-heat in a pan if needed
Notes
Great served with wholewheat pasta.
