Nutrient Boosted Tomato Sauce

Ingredients

  • 2 generous handfuls cherry tomatoes
  • 2 red sweet peppers
  • 2 cups cooked yellow lentils
  • One third a tube of tomato paste/puree
  • Half a bottle of passata
  • Pinch of salt
  • 2 teaspoon apple cider vinegar

Step by Step Instructions

Step 1

Roast tomatoes and peppers for around 30 minutes at 180 degrees until tender

Step 2

Blend with all other ingredients

Step 3

Feel free to re-heat in a pan if needed

Notes

Great served with wholewheat pasta.
