Blueberry Cashew Swirl

Ingredients

  • 1.5 cups Cashew nuts – soaked & drained
  • 1/4 cup Dried Dates – soaked (keep the date water)
  • 3 tbsp Lime juice
  • 1 tbsp Ground flaxseed
  • 3 tsp Vanilla extract
  • 1 cup Fresh or frozen blueberries (keep some aside for base & garnish)
  • Oat granola for topping

Step by Step Instructions

Step 1

Soak the cashews and dates for at least a couple of hours in water.

Step 2

Drain the cashews.

Step 3

Put all ingredients (except for blueberries and probiotics) into a high-speed blender and blend until smooth and creamy. Include the date water.

Step 4

Separate mixture in half, leaving half in the blender.

Step 5

Add blueberries and blend until a beautiful purple colour.

To assemble

Add a few blueberries to the bottom of your serving glass.
Layer up the two different cashew mixtures.
Add granola & blueberry topping.
Chill for a few hours before serving.
