Chickpea spinach curry recipe

Ingredients

  • 50g dried goji berries (plus extra to serve)
  • 1 tin of chickpeas (around 230g cooked chickpeas)
  • 1 tin of cannellini beans (around 230g cooked cannellini beans)
  • 1 tablespoon tahini
  • 2 tablespoons olive oil
  • 50g walnuts
  • 3 tablespoons lemon juice
  • 1 tablespoon smoked paprika
  • 2 pinches of salt

Step by Step Instructions

Step 1

Soak the goji berries for around 15 minutes.

Step 2

Drain and rinse the chickpeas and the cannellini beans.

Step 3

Combine all the ingredients in your food processor until it gets smooth.

Step 4

Add the goji berries and process a little bit.

Step 5

Transfer the hummus to a bowl and add garnish.
