PAUL Partners With The Food Medic To Launch New Mostly Vegan Summer Range

PAUL’s new Feel Good Food range is an easy and healthy on-the-go option, developed exclusively in collaboration with NHS Doctor, Registered Associate Nutritionist and best-selling Author Dr Hazel Wallace – aka The Food Medic.

PAUL has worked with Dr Hazel to create a range which promotes a well-balanced diet in response to the increasing demand for more sustainable and vegan options.

The new healthy offerings are made using ingredients that help keep you fuller for longer, are high in plant-based protein and fibre, rich in omega 3 and low in saturated fat.

The range includes protein-packed salad boxes of jackfruit & mango and tofu & sweet potato, open sandwiches topped with a medley of Mediterranean veggies, and a vegan Reuben sandwich filled with sauerkraut, balsamic beets and vegan gouda

All of the sandwiches use PAUL’s freshly baked natural bread free from additives and preservatives.

Dr Hazel Wallace is a qualified medical doctor, nutritionist, best-selling author, and the founder of The Food Medic. She started ‘The Food Medic’ blog in 2012, in a bid to bridge the gap between conventional medical advice and developments in nutrition. Her first book The Food Medic, was released in 2017 and made both the UK and Irish Bestseller lists. Her second book The Food Medic for Life was released the following year in April 2018, and also made the bestseller charts.

PAUL is the biggest bakery in France. PAUL’s new vegan options:

Strawberry and Banana Open Sandwich/Blueberry and Banana Open Sandwich (£3.25) – A slice of multi-seed bread, spread with a layer of almond butter sweetened with a little maple syrup, topped with either fresh banana and strawberries or banana and blueberries, and finished with a scattering of cacao nibs and mint. Available breakfast only.

Green Chickpea & Avocado Open Sandwich (£3.35) – A slice of multi-seed bread, generously topped with smashed avocado and green chickpeas, red and yellow cherry tomatoes, a drizzle of balsamic glaze, and a pinch of sea salt and basil. Available all day.

Reuben Sandwich (£4.75) – A multi-seed sandwich filled with a black olive ‘veganaise’, sauerkraut, balsamic beetroot slices, vegan smoked Gouda cheese, grilled marinated carrot and wild rocket.

Jackfruit Sandwich (£4.65) – A multi-seed sandwich spread filled with BBQ jackfruit, Batavia leaves, grilled red and yellow peppers, cornichons and ‘veganaise’.

Tofu & Sweet Potato Salad (£4.85) – Sticky tofu marinated in maple syrup, mustard and olive oil, served with beetroot, sweet potato, kale, whole green chickpeas and mixed grains, with a dollop of citrusy coriander houmous.

Jackfruit & Mango Salad (£4.85) – BBQ jackfruit on a bed of Batavia lettuce leaves with mango, grilled red and yellow pepper, red and white quinoa and a generous dollop of smashed avocado and green chickpeas.

Almond & Blueberry Pot (£2.50) – A layer of smooth almond butter, topped with oats and chia seeds marinated overnight in apple juice and soy yoghurt, finished with blueberry compote and a sprinkling of toasted flaked almonds.

Chocolate Oat Pot (£2.50) – Fresh banana and maple syrup with cacao nibs, topped with oat and chia mix which has been marinated overnight in soy yoghurt with a touch of cocoa.
