Basmati Rice

Step by Step Instructions

Step 1

Rinse your rice well. Cover in water with about 1 inch over the level of the rice and soak for at least 10 minutes. Drain well.

Step 2

In large non-stick pan, toast the rice grains lightly for a couple of minutes, being careful not to let them burn. Cover with about twice as much water as rice, and salt to taste, then bring to the boil. Cover, reduce to a low heat and cook for 20 minutes.

Step 3

Mix gently, then cover again and cook for 5 to 10 minutes more until tender. Fluff with a fork to serve.

For turmeric rice

Add 1 tsp turmeric, 1 tsp pumpkin seeds, 1 clove crushed garlic and 1/4 tsp black pepper when toasting the rice.

For sesame-soy sauce rice

Add 1 tbsp tahini and 1 tbsp water and tbsp tamari soy sauce (omit salt) when toasting the rice.

For herbed rice

Add 1 tsp chilli flakes, 1 tbsp flaked almonds, 1 clove crushed garlic, 1 tbsp mixed dried herbs when toasting the rice.

You can also substitute rice for another grain and use the same method. Suggestions include millet, buckwheat, amaranth, quinoa, teff, bulgar wheat.
