Blanched Vegetables

Step 1

Bring a large pan of water to the boil and fill a large bowl with cold water and ice.

Step 3

Submerge your vegetables in the boiling water for a few minutes until slightly softened and they begin to change colour. Swiftly remove them and submerge them in the ice water until cold. Serve immediately or store in a sealed, refrigerated container.

Step 3

You may wish to toss them in a little balsamic, mustard, tahini dressing or chilli paste. They can also be added into a salad or heated gently.
